The frisella, frisa or fresella, depending on the dialect) is a Southern Italian, mainly Puglian, traditional bread and a good example of ‘cucina povera’ or ‘peasant fare’. The frisa is essentially a bagel made of wheat flour or a mix of wheat and barley flour, half-baked, cut roughly in half, and then baked hard. To eat a frisa, just dip it in water for a few seconds, or sprinke some water over the top and then spread it with your chosen topping, maybe just olive oil or cannellini beans, sun dried tomatoes, chopped fresh tomatoes and basil. Frise make great filling and delicious antipasti. Peasants would traditionally use a small plate, also called a frisa for preparation, allowing the bread to be wet and then prepared without too many dishes!
