Before the many modern methods of food preservation like canning and freezing, the Italians found a unique way to enjoy the beloved tomato long after harvest. arranging slices of garden-fresh tomatoes on their rooftops, leaving them to dehydrate in the summertime rays. From this simple discovery, they learned how to capture that desired tomato flavour, but moreover, the sun-dried tomatoes, or pomodori secchi, were even more flavourful than they anticipated with an intensified sweetness.

To rehydrate them place the tomatoes in a bowl and cover with boiling water and leave until the tomatoes are plump and juicy once more (reserve the liquid to add flavor to stocks and sauces).
Sun dried tomatoes can be used in so many different ways, chop them finely to make an amazing pasta sauce, with or without tomato passata, top your pizzas with them, season them with olive oil, garlic and oregano and eat them as an antipasto, add them to salads, cous cous, savoury rice dishes, soups, stews and casseroles. Like many of our producers Casarecci di Calabria use old fashioned recipes to create old fashioned products, once the staples of any Southern Italian family and now sought after delicacies. Their entire range is produced without adding any preservatives or colours.
