This pasta is made using a very special durum wheat semolina – ‘Senatore Cappelli’ - grown organically in the hills of the Marche, Puglia and Basilicata regions. Senatore Cappelli is an ancient type of grain with a high protein, vitamin and mineral content and has an intense flavour and aroma.  It is also much more easily digestible than ordinary pasta.

Senatore Cappelli wheat grows up to 1m 80cm tall which means that there is no need for any fertilizers to promote growth, nor has it ever been subject to any genetic modification techinques now so often used in modern agriculture. Although very common in the 1930’s and 40’s this type of pasta was gradually replaced by other varieties made from wheat that was much easier to grow and harvest.

Vincenzo Marvulli "Cenzino" is a small, family-run business in Matera, Basilicata. Giovanni Marvulli set up this award winning company in 2006, naming it after his father. As well as this very special organic pasta, ‘Cenzino’ also produces mult-award winning organic extra virgin olive oil. Giovanni tends to his 2600 trees with organic sustainable methods controlled and certified by the ICEA (Institute for Ethical and Environmental Certification).

Giovanni’s organic farming excludes the use of chemicals in order to grow a more natural, wholesome and healthier crops favouring quality over quantity. He harvests his olives by hand at optimum ripeness, exercising great care in milling, blending and cold pressing.
