These traditional Gluten Free Italian cherry-filled biscuits originate from the beautiful island of Burano in the Venetian Lagoon. Burano is famous worldwide for its multi-coloured fishermen’s houses, needlepoint lace and delicious confectionery, in particular the ‘bussolà’ ring cake biscuit!

Originally made at Easter time ‘Bussola’ biscuits are wonderfully fragrant treats traditionally made with sugar, butter and egg yolks. Palmisano decided to give a new twist to the traditional Bussolà and created the world’s first mini ring cake with filling: a delicious novelty conceived mainly with children in mind.

Their ‘senza pensieri’ or ‘carefree’ version of these treats are certified gluten free as well as being high in protein and low in fat and carbohydrates. They are made with carefully selected ingredients which are all 100% natural. Because of their high nutritional value, Palmisano's biscuits are recommended for sportsmen and women and in fact Palmisano are long time sponsors of the Venice Marathon!


Biscuit: Gluten-free mix (corn starch, dried skimmed milk, icing sugar, guar gum, psyllium seed husk, corn maltodextrins), sugar, pasteurised eggs, butter (10%), vanillin, flavoring. Filling: (30%): semi-prepared cherry product (cherry purée (40%), sucrose, glucose-fructose syrup, dextrose, pectin, flavouring, acidity regulator citric acid).

Our Producer - Palmisano

In 1926 Antonio Palmisano set up an oven on the Venetian island of Burano to which the local women brought their Bussolà ring cakes and ‘Essi’ biscuits (prepared with the same mix but shaped like an “S”), as well as other specialties, to be baked.

In the fifties these specialties started to find their way from the oven of Antonio and his son Luigi to the shops in the historic centre of Venice. As time passed new ingredients, such as cocoa, coconut and many others, were added to the original recipe, prepared lovingly by hand.

In the late nineties the business moved from Burano to nearby Cavallino, with Francesco Palmisano, Luigi's son, at the helm of the artisan workshop which by then had developed into modern (but still family-run) company offering a range of specialities which are a blend of tradition, innovation, pleasure and wellbeing.

The company has been certified as an authorized producer of gluten-free foods by the Italian Department of Health.
