Pasteurised cow's milk
From the island of Sardinia comes this raw sheep's milk cheese with luxurious black truffle. Unlike most truffled cheeses, in the Pecorino with Truffle Moliterno the truffle paste is infused after the cheese has already been aged so that the cheese develops its own character before the truffles are added.
The truffle flavour permeates throughout the entire paste of this amazing pecorino cheese making this an unusual and delicious treat for any cheese and/or truffle lovers!
How to store
Keep wrapped in naturally waxed paper in the fridge, ideally inside a slightly opened container so that the cheese still gets some oxygen. Pecorino with Truffle should keep for 2-3 weeks. Remember to remove from the fridge an hour or so before serving to bring the cheese up to room temperature.
Ingredients
Unpasteurized sheep's milk, black summer truffle (Tuber aestivum vitt.) min 5%, organic extra virgin olive oil, salt, rennet, natural flavours. Crust is not edible.

In the late 19th century, cheeses were carried by sailing ships, now they are carried in temperature-controlled trucks to ensure there is no break in the cold chain. This is how the story of the Villecco family unfolds, spanning four generations, each focused on producing high-quality sheep’s and goat’s cheese. Growing steadily in terms of both size and range with the introduction of ever-new products, the business became known as Central in 1974 and brought its multitude of small dairies scattered around the Sardinian countryside under one roof in its new strategically located Serrenti facility.
