'Il Porcino ha l'oro in Bocca' (Red Gold in the Woods Penne with Porcini Mushrooms and Saffron).

Michelin Starred Chef Marc Lantieri has created a very special dish by providing a balance and harmony of flavours that are unique and delicious. This exquisite sauce combines Porcini mushrooms with saffron, corn, parsley, extra virgin olive oil and butter made with Italian milk. The corn’s delicate crunchiness gives the dish an unexpected texture which is an added surprise. To put it bluntly: this dish will literally leave your guests stunned.

 

What's inside the kit?

500g of Leone's Penne Pasta            1 packet of dried Porcini mushrooms

1 jar of Saffron                                   1 jar of corn and parsley

1 jar of onion                                      1 jar of clarified butter

1 vial Italian extra virgin olive oil        2 small packets of Italian cooking salt

 

Ingredients

Penne Pasta - Durum wheat pasta: Semolina from 100% Italian durum wheat. Cooking time: 10 min. Pure Saffron powder (Mancha type); Dried porcini mushrooms (Boletus edulis and relative group). Cryo-dried Corn and Parsley: corn 75%, parsley 25%. Clarified butter: fresh cream. Keep in the fridge after opening and use within 10 days; Dehydrated onion powder.

Kit Storage Conditions: Keep in a cool dry place

About the Chef

Marc Lantieri, One Michelin Star given in 2009 at Ristorante al Castello

Marc, who has been a part of the Michelin starred Chefs circle for many years, was born in 1968 in Tenda, a very small town beyond the Piedmont border, on the French side of the Roya Valley, which is strongly influenced by traditional Italian cooking.

After proving his talents at Mentone’s Scuola Alberghiera, Marc started an intense training journey assisted by some of the most important contemporary figures of international cuisine such as Alain Ducasse, Christian Morisset, Michel Rostang, Enzo Santin, Annie Feolde, e Paolo Teverini, who deeply influence him and his style.

Marc Lantieri runs his restaurant in the enchanting location of the Grinzane di Cavour Castle, historical home of Count Benso di Cavour and which for years has been the home of the “Asta Mondiale del Tartufo Bianco d’Alba”.
