'Peccati di Viola' (Purple Sins Risotto with beetroot, raspberry & Wasabi pearls)

An explosion of lavish colours and flavours, this recipe by Michelin Starred Chef Christian Milone truly represents contemporary gourmet cuisine. Acquerello rice is the perfect ingredient in this recipe, giving the dish its flavour and, at the same time, absorbing the beetroot’s crimson colour, the superb touch of the raspberry wine vinegar, the creamy Parmigiano and the sensorial kick given by the Wasabi pearls. And preparing it is so easy!

 

What's inside the kit?

500g of Acquerello Rice                      1 jar of beetroot

1 jar of Wasabi pearls                          3 vials of Raspberry wine vinegar

1 small packet of coarse Italian salt    1 jar of grated Parmigiano Reggiano DOP

 

Ingredients

Acquarello Rice (Carnaroli variety) - Cooking Time: 18 min; Powdered beetroot; Wasabi Pearls - Condiment made of extra virgin olive oil 96% and wasabi - Extra virgin olive oil, water, wasabi flavour, gelling agent, stabiliser, acidity regulator, preservative: E202. It may contain traces of sesame and nuts. Refrigerate after opening and use within 1 month; Raspberry wine vinegar: vinegar, raspberry juice, natural flavour, antioxidant. Contains sulphites. Cryo-dried Parmigiano Reggiano cheese: Parmigiano Reggiano Cheese (Milk, salt, rennet); Clarified butter: fresh cream. Keep in the fridge after opening and use withing 10 days. Coarse Italian Salt.
