About the recipe

'Vecchia Latteria' (Old Dairy)

This one of Michelin Starred Chef Andrea Larossa's best known and iconic dishes which contributed to his earning a prestigious Michelin Star and increased his fame in the gourmet restaurant environment.

The Acquerello rice in this risotto is perfectly cooked until creamy, mixed with exquisite Monte Vecchio cheese (intense and pungent with an aroma which recalls dry fruit, such as almond and hazelnut) and then topped with liquorice powder giving an explosion of flavour!

This combination of flavours and aromas gives and this dish an intensity which is definitely unexpected, but at the same time, very balanced. It most definitely has the 'wow factor'!

 

What's inside the kit?

500g of Acquarello rice                1 jar of Monte Vecchio cheese

1 small packet of liquorice            1 jar of clarified butter

1 vial Italian extra virgin olive oil   1 small packet of coarse Italian salt

 

Ingredients

Acquerello Rice (Carnaroli variety) Cooking time: 18 min; Cryo-dried Monte Vecchio Cheese - Milk, salt, rennet; Liquorice extract in powder– liquorice, glucose syrup, brown sugar syrup. May contain traces of nuts, sesame, soy and milk; 100% Italian Extra virgin olive oil – Superior category olive oil obtained directly from olives and solely by mechanical means; Clarified butter: fresh cream. Keep in the fridge after opening and use withing 10 days; Coarse Italian Salt 

Kit Storage Conditions: Keep in a cool dry place

About the Chef

Andrea Larossa, One Michelin Star given in 2017 at Ristorante La Rossa, Alba

Andrea was born in 1980 and was raised in a home tied to his mother’s cooking traditions from the Lazio region of Italy and to his father’s from the Basilicata region of Italy…a combination of recipes, flavours and aromas intertwined with the pleasure of eating together.

He says that he has 'learned from anywhere and anyone' becoming interested in diverse cuisines, and eventually training with internationally famed chefs.
