Vin Santo ('Holy Wine') is the name given to the amber-coloured straw wines traditionally from Tuscany. The origins of the name probably date back to the time when these wines were used for Holy Communion. 

Straw wines are traditionally made from grapes left to dry out on straw mats after harvest. The mats are placed in the warmest, driest part of the winery so the grapes gradually desiccate over the winter. This process concentrates the grapes' natural sugars and therefore the flavour of the wine they make. 

After the grapes have dried out over a period of 3–6 months, they are gently pressed and the must is fermented. After fermentation, the wine is left to age in small wooden casks. Ageing lasts a minimum of three years with some producers leaving their wines for as long as ten years!

Vin santo wines are known to have been made since at least the Middle Ages, and have become a traditional part of Tuscan life. They are offered as a welcoming drink to house guests, and are often enjoyed as a dessert with Cantucci biscuits. The wines are still produced widely today, and were finally recognized under DOC law in 1997. 

San Vito's Organic Vin Santo is thick and intense in the mouth, has aromas of apricots and orange blossom, followed by a caramel, nut and raisin-rich palate with a hint of honey and cream on the finish. 

This is an excellent "vino da meditazione" or sipping wine; it pairs well with all types of biscuits as a dessert wine and can also be enjoyed with herbed cheeses served with fruit preserves and mostarda.

Our Producer – Tenuta San Vito

In 1985, the Tenuta San Vito was the first wine-growing estate in Tuscany to switch to organic production, It is remarkably large, measuring 150 hectares, approximately 30 hectares of which contain vines and 20 hectares olive trees. The rest is forest, which surrounds the entire estate. Situated in the hills of the Chianti Colli Fiorentini, 18 kilometres from Florence, it is secluded and far away from noise and traffic.

Since 1985, all of San Vito's products have been certified by the A.I.A.B. (Associazione Italiana Agricoltura Biologica), and the winery is a member of I.F.O.A.M. (International Federation of Organic Agricoltural Movement). The current certifying authority is I.C.E.A. (Istituto per la Certificazione Etica ed Ambientale), which ensures observance of the E.U. 2092/91 regulation and international norms.

San Vito's observance of organic farming means that it uses only substances derived from organic minerals, both for fertilisers and anti-pest treatments. This allows the soil to maintain its productive capacity without leaving any chemical residues in the soil or in the wines.
