Organic Ligurian Soup with Beans & Chick Peas
This organic Ligurian soup mix makes a hearty and nutritious lunch or dinner for the whole family. It's packed with organically produced, all-natural ingredients including beans, chick peas and spelt. Once soaked overnight the mixture just needs a couple of hours on the hob.
How to prepare:
Soak for 12 hours, if possible changing the water every three hours and then drain. Cook in 1 litre of cold salted water for 2 hours from boiling with together with 1 chopped carrot, 1 chopped celery stalk, half an sliced onion and a vegetable stock cube. Serve with grated Parmesan, a drizzle of olive oil and croutons.
