Our handmade, artisanal pasta in traditional shapes and sizes is bronze die cut, dried at low temperatures and made in Cosenza in Calabria.
Strozzapreti is one of our favourite regional pastas! The name literally means ‘strangle the priest’. Priest-stranglers apparently got their name when they were originally made for priests who found them so delicious they couldn’t eat them quickly enough and ended up choking! They are rolled with a twist that looks like a rope! These Strozzapreti are made with beetroot and tomato giving them a vibrant colour and exceptional flavour.
These would pair nicely with tomato sauces with or without meat.
