Organic Tuscan Bean Soup
Weight: 500g (Serves 4)
This organic soup mix is packed with organically grown beans, chick peas and lentils from Tuscany. It makes a hearty and nutritious lunch or dinner for the whole family. Once soaked overnight the soup can be left to cook on the hob for a couple of hours, stirring occasionally. Serve with crusty bread.
How to prepare:
Soak for 12 hours if possible, changing the water every three hours then drain. Cook in 1 litre of cold salted water for 2 hours from boiling with together with 1 celery stalk, half an onion and a carrot cut into small pieces and a vegetable stock cube. Serve with grated Parmesan, a drizzle of olive oil and croutons.
