Description
This is the ultra-premium dessert wine produced by the La Regola estate in Tuscany. It is a Passito-style wine made from white grapes that have been dried to concentrate their sugars and flavours before fermentation.
This delicious sweet wine is produced following the 'Caratelli' process whereby the must is placed in small 100-litre oak barrels called caratelli. These are only half-filled and sealed with a cement cap, where the wine remains for at least 10 years. After the barrel aging, it spends another 12 months refining in the bottle.
Sondrete is known for its intense, viscous and complex character. It has strong notes of apricot, plum, and caramel, along with floral scents like pressed flowers and secondary hints of tobacco and rosemary. On the palate It is luscious and full-bodied, offering high acidity to balance its intense sweetness. Reviewers often note flavours of butterscotch, white chocolate, and dried fruits
Food pairings
Due to its richness, it is best paired with blue cheeses (like Gorgonzola) or extra-dark chocolate.

La Regola
La Regola is located in Riparbella, on the Tuscan Coast, in the Cecina River valley, just a few miles from the sea. This area has long been ideal for growing grapes, with vineyards, olive trees, and cypress trees creating a classic Tuscan landscape.
Archaeological finds, including remains of an Etruscan settlement from the 7th century BC and many wine amphorae, show that winemaking here has a very long history.
The soil is made of sandy layers rich in fossils, mixed with clay and iron. Along with the vineyards’ south-southeast exposure, this helps the grapes ripen evenly. As a result, the wines are elegant, well-structured, and have a long-lasting flavour.
