Panforte is a traditional Tuscan cake made with almonds & candied fruit which has been around since the Middle Ages. In the past it was known as Pane Natalizio (Christmas bread) or Pane Aromatico or Panpepatus (Spicy bread) and baked only by skilled pharmacists called Speziali. Because of the rarity and cost of most of its ingredients, Panforte was enjoyed almost exclusively by the clergy and the wealthy.

Over the centuries the recipe of 'Panpepatus' did not change substantially with the main ingredients being candied fruits, spices and pepper. However in 1879, in Siena, during the visit of Queen Margherita di Savoia, a Speziale prepared a Panforte with less spices and without candied melon to better meet the Queen’s personal taste. In her honour this new recipe was called Panforte Margherita, today known also as Panforte Bianco.

Nowadays Panforte has become a well known dessert, served at the end of traditional Christmas meals, with a glass of sweet wine such as Tuscan Vin Santo. Presented in a gift box, it makes a great Christmas gift.

Ingredients

Candied fruit 33% (orange peel, citron peel, glucose-fructose syrup, sugar, concentrated lemon juice, almonds 30%, sugar, wheat flour, honey, spices, icing sugar (sugar, corn starch, vegetable fats, salt cocoa), wafer (potato starch, water, olive oil). May contain traces of walnuts, hazelnuts, pistachio nuts, soy, milk and eggs.
