Vin Santo ('Holy Wine') is the name given to the amber-coloured straw wines traditionally from Tuscany. The origins of the name probably date back to the time when these wines were used for Holy Communion. 

Straw wines are traditionally made from grapes left to dry out on straw mats after harvest. The mats are placed in the warmest, driest part of the winery so the grapes gradually desiccate over the winter. This process concentrates the grapes' natural sugars and therefore the flavour of the wine they make. 

After the grapes have dried out over a period of 3–6 months, they are gently pressed and the must is fermented. After fermentation, the wine is left to age in small wooden casks. Ageing lasts a minimum of three years with some producers leaving their wines for as long as ten years!

Vin santo wines are known to have been made since at least the Middle Ages, and have become a traditional part of Tuscan life. They are offered as a welcoming drink to house guests, and are often enjoyed as a dessert with Cantucci biscuits. The wines are still produced widely today, and were finally recognised under DOC law in 1997. 

The Vin Santo del Chianti from Cantina Bonacchi is a traditional Tuscan sweet wine with heady aromas of toffee and caramel. Vin Santo is traditionally served after a main meal with Cantuccini biscuits or as a palate cleanser. This is a superb dessert wine too and will match most desserts and strong cheeses.

Cantina Bonacchi, located in the heart of Montalbano, has been making fine Tuscan wines for 3 generations. The wines are produced from 40 hectares in the Chianti Montalbano and the Chianti Classico area, as well as from 10 hectares divided between Brunello DOCG, Rosso di Montalcino DOC and the Santa Antimo DOC. The latest addition is 15 hectares in the Montecucco DOC region.
