Filotea Pappardelle Artisan Egg Pasta
Serves 4 people
Pappardelle is a type of pasta that is more suited to stronger flavours. It has its traditional roots in Tuscany, where it is paired with full-bodied sauces with a base of hare and wild boar. Pappardelle pasta is very similar to tagliatelle, but broader (around 12mm), lending a full flavour both in terms of taste and touch.
This pasta is bronze drawn and slowly dried at low temperatures. Thanks to this process it is rough in texture and porous. It is this characteristic that sets this pasta apart, it can absorb sauces and flavours like no other pasta can. It is full-bodied enough to stand up to robust sauces and flavours and yet light enough to not over-shadow them.
Durum wheat semolina, eggs (30%), Wheat flour.
Filotea is a small company, situated in the heart of the Marche region, which produces pasta according to local traditions. Filotea, a name of Greek origin, means “God’s friend”. Filotea’s top priority is achieving excellent flavour, using meticulous processing methods, and carefully monitoring all the preparation phases, starting from the choice of flour, durum wheat semolina and fresh eggs. The pasta is dried very slowly at a low temperature. This special drying process gives pasta an authentic homemade flavour. This patient artisan preparation guarantees a unique product which is incredibly light and easy to digest while its textured surface helps absorb sauces thus exalting the flavour of all ingredients.
Filotea is regarded as one of the 'Top Italian Food & Beverage Experiences' by the leading Gambero Rosso guide.
