'Amatriciana' Pasta Sauce

This ready-to-use pasta sauce is a classic Roman favourite. Made from just five simple ingredients: guanciale (cured pork cheek), pecorino cheese, chilli, white wine and tomatoes from San Marzano it originates from Amatrice, a tiny town in the mountains bordering Abruzzo about 100 miles from the capital which was recently destroyed by a devastating earthquake. Amatriciana is a robust, hearty sauce which can be served with our spaghetti, linguine or fusilli bucati.
Cooking Tip: We suggest retaining a couple of tablespoons of the cooking water before draining the pasta and setting it aside. Then once you have drained the pasta put it back in the pan, add the Amatriciana sauce and then the cooking water. Gently heat for a couple minutes until the sauce is well amalgamated with the pasta & serve immediately.
