Risotto Mix with Asparagus & Pistachio

This risotto mix has been prepared by our partner Casarecci di Calabria with the very best Carnaroli risotto rice from the plains of Sibari in Calabria. Easy to prepare with all natural ingredients, this tasty risotto with asparagus and pistachio makes for a quick and gourmet main or side dish.
Warm a knob of butter in a pan, add the rice mixture and let it toast. After a few minutes add a little dry white wine and let the mixture blend in. When the wine has completely evaporated boil some water and pour into a jug. The water should be added gradually to the rice a ladle at a time. Do not add more water until the rice has absorbed all the water in the pan. Keep adding water until the rice is cooked. Normal cooking time for the rice is 13 minutes.
Add a little more butter if desired and stir through. Sprinkle with Parmesan to serve.
