Callipo Anchovy Extract (Colatura di Alici) is a traditional specialty obtained from anchovies caught in the Mediterranean Sea.
During the pressing and maturation of salted anchovies, the liquid that rises to the surface is gradually extracted and naturally concentrated. The result is a clear, amber-coloured extract with a strong, full-bodied flavour that preserves the rich aroma of the salted anchovies.
Packaged in a 100ml bottle with a drip stopper for precision, this umami-rich condiment is perfect for enhancing pasta sauces, seafood dishes, vegetables, dressings and marinades. Just a few drops bring bold, authentic Mediterranean flavour to any recipe!
