Fregola, also known as fregula (in Sardinian dialect) is small, very ancient semolina pasta hailing from the island of Sardinia. 'Fregula Sarda' looks similar to large couscous and consists of tiny rolled balls or crumbs (fregola means crumb in Italian) made from semolina flour and water and in the past dried in the sun. Our fregola have been toasted in the oven which gives them a satisfying unique flavour and mottled texture.

These little pasta balls soak up flavours really well and are sometimes cooked in stock rather than just salted pasta water. Fregola is delicious on its own, served simply with olive oil, sea salt and a dusting of cheese, in soups, combined with vegetables and fresh herbs as a side dish or light meal, with tomatoes, chick peas, seafood or cold in a salad.

To prepare, add to a large pan of boiling water and cook for 12-15 minutes. Then dress with the sauce of your choice or add to a salad or soup.
