Tomato Pasta Sauce with Crusco Peppers
This ready-to-use pasta sauce is made from sweet Crusco peppers which are typical of Southern Italy. Crusco peppers are harvested from August to September and enjoyed fresh, dried or ground into powder as a spice.
These peppers give the tomato sauce a delicious sweet and slightly smokey flavour. We recommend Cavatelli pasta as the perfect pasta shape to enjoy with this sauce.
Cooking Tip: We suggest retaining a couple of tablespoons of the cooking water before draining the pasta and setting it aside. Then once you have drained the pasta put it back in the pan, add the Crusco pepper sauce and then the cooking water. Gently heat for a couple minutes until the sauce is well amalgamated with the pasta & serve immediately.
